Allegiant Stadium Executive Chef Calls Audible To Break Out Lox Sandwich For Raiders-Seahawks Game In 2026

LAS VEGAS, Nevada — The executive chef at Allegiant Stadium pulled a culinary audible when it came to a lox sandwich for the Raiders vs Seahawks game Nov. 15.

“I wanted to do a bagel and lox but I couldn’t find a ten-inch bagel so I went with a herb and tomato focacchia,” said Gil Morales, the Oak View Group executive chef at the Raiders home stadium.

If only new Raiders head coach Klint Kubiak can show such resourcefulness.

Oak View Group took over the job of running the food/bev service at Allegiant Stadium in 2025 after Levy Restaurants scored the concessions job in 2019.

When Levy Restaurants lost the Allegiant Stadium job in spring 2025, Levy used a LinkedIn post last year to explain that when Raiders owner Mark Davis sold a minority share to Oak View Group investor Egon Durban, “the common ownership interest of both the Raiders and OVG was impossible to overcome.”

So, OVG runs the food show at the domed stadium where the concessionaire hosted a tasting of the offerings for the 2026 season.
